Recipe: Super Breakfast Bars

This recipe was inspired by one of my instagram followers '@Calllherrissa' who is one of my vegan followers who makes so much great looking stuff i had to try my hand at making these breakfast bars! She did use a lot more stuff than i did but i used the gist of what was used. Below this recipe are different alterations you can make, check out the changes for kids!


Prep Time: 5mins | Cooking Time: 30-45mins
Makes 24 bars






You Will Need:

  • 2 1/2 Cups of Rolled Oats
  • 1/2 Cup of Raisins
  • 1 Cup of melted Butter 
  • 6 tablespoons of Brown Sugar
  • 2 tablespoons of Chia Seeds
  • 4 tablespoons of Maca Powder
  • 2 Packets of whole food nuts (asda)
  • 4 tablespoons of Smooth Peanut Butter
  • 1 teaspoon of Vanilla Essence
  • 1 tablespoon of Coco Powder
  • Lime zest.

Method:


  1. Pre-heat your oven to make sure it is nice and warm!
  2. Add your dry ingredients (apart from the sugar and lime) into a large mixing bowl. (for a smooth mixture place in a food processor and pulse until you're happy with the size of the nuts in the mixture)
  3. Melt the butter, sugar and lime in a small saucepan, this smells great! Be sure to keep this on a med-low heat, we don't want the sugar to turn to caramel, we just need it to melt!
  4. Mix the butter mix into the dry mix, then add your honey, peanut butter, vanilla and mix well.
  5. Place the mix onto a baking tray lined with greaseproof paper, spread the mixture across the tray and flatten enough so that the mix is even.
  6. Place in the oven, for around 30mins on a low/med heat. You want the mix to be slightly golden and crispy on the top.
  7. Once cooked, leave to cool for 20mins before cutting and wrapping, unless you want to have them there and then, you could serve with a nice helping of greek yogurt.

Other options:

Kids:

  • We all know kids will eat anything with chocolate in it, i suggest using all the above but add some melted chocolate while the mix is cooling, great for the kids to do, so they can make any pattern they want too, plus, who doesn't like to lick a bowl of melted chocolate? 
Totally Nutty:

  • Here's one for the guys who love nuts! You are free to be a nutty as you want too, i would add some almonds, cashews and brazil nuts to this mix and reduce the amount of seeds.  

Tutti Fruity:

  • Sometimes we need to try some more fruits, i would suggest trying them in these little bakes. So add different blends together! Why not try dried cranberries and dried apricots, experiment with different sizes too. 

Plain Jane:
  • If you don't wanna add fruit you can change the zest you use, a good zest to use would be grapefruit.
