Recipe: Go Bananas

This is a recipe I had actually found but it seemed really bare lacking in all the goodness you actually need in a very quick baked good. So here is my take on Banana Bread.

Prep Time: 10mins Cooking Time: 45mins-1hr

You will need:


  • 4 ripe bananas - NB best if they are going bad
  • 1 cup of Castor sugar - HO brown sugar
  • 1 1/4 tbsp baking powder
  • fresh vanilla - NB 1 teaspoon of vanilla essence
  • two large eggs or three medium ones
  • 1/4 cup of melted butter
  • 2 cups of plain flour
  • 1/4  tbsp teaspoon baking soda
  • 1 1/4  tbsp nutmeg
  • 1/4 cup of milk

Method


  1. Peel the bananas chop so they can fit in a bowl and mash with a fork,(if your bananas aren't as soft pop them in the microwave for no longer than 10 seconds just to soften them up) in the same bowl add the milk and mix the add the nutmeg and mix well.
  2. In a large mixing bowl add all the dry ingredients and mix. Create a well then add egg and butter and combine the banana mixture then mix all until smooth.
  3. Do a taste test and alter to taste.
  4. Add the mixture to a butter lined bread tin to prevent sticking.
  5. Cook at gas mark 6 and check after 45mins to prevent sinking of the loaf. Loaf is done once a lovely golden brown and has risen to roughly twice its size. Take out the oven leave to cool for 15mins.

Served best: while still warm with a scoop of ice cream for the kids.
