Recipe: Simple Salmon

I enjoy eating food from a range of cultures but they take far too long to make! Sometimes its nice to know you can come home throw everything in the oven and be eating in less than half an hour, but it's become difficult for people to have 'healthy' oven meals! So I have been a little bit creative with this recipe it will only take you 20-25 mins to make and it is utterly simple, so as usual if you try this don't forget to tag it on Instagram & Twitter -> #RowCooks #SimpleSalmon

Serves 4


You Will Need:

For The Fish
  • 4 Salmon fillets - no skin or bones (Salmon used in image was from Costco)
  • 4 tbp of yellow mustard seeds (one per fillet)
  • 4 Whole Cloves of garlic (one per fillet)
  • Handful of fresh thyme
  • 4 tsp of Cayenne pepper NB- could also use Jamaican pepper sauce
  • Sale & Pepper to taste
For Sauce
NB - this sauce can be frozen & reused!

  • 125ml double cream
  • 50g of butter
  • Half a chopped onion 
  • 2 tbs Corn Flour
  • 1 tsp lemon juice
  • 125ml Veg Stock
  • Salt & Pepper to taste

Method

  1. Pre-Heat your oven at gas mark 4 before you do anything else.
  2. Take a piece of foil big enough to wrap each salmon fillet into a parcel. place a fillet into the center of the individual foil then season it using all the ingredients, once the fillet is seasoned wrap up the parcel and place to one side. Continue to season the other fillets in the same fashion.
  3. Place each parcel onto a oven proof rack one that can go on top of a tray would be preferred - if you have this place the rack on top of a tray half filled with water this will allow your fish to steam making it nice and flaky while infusing the flavors however if you don't place the salmon on the trays in your oven and place an oven tray at the bottom also half filled with water, the fish should take 10-20mins to cook depending on the size of your fillets. While your fish is cooking lets prepare the sauce!
  4. This sauce is very simple and is only the basic sauce you can add things to make it to your own taste - Do let me know what you change so i can make it and taste it too lol! In a saucepan melt your butter on a medium heat to prevent the butter from burning, then add the cream and veg stock and simmer, finally add the onions then add the corn flour to thicken the sauce to the consistency that you like. You can also add a good quality white wine instead of veg stock.

By this time your fish should be nicely steamed through and ready to eat!
