Recipe: Homemade Salmon, Mango Lasagna

I've been combining different flavours again! I've come up with this really easy and taste bud complementing dish that is going to fill you up, great for all the family and makes the taste of Salmon more appealing to young children (or fussy adults) who aren't quite team Salmon yet. There are 2 parts to this recipe i would advise making the sauce just before you're ready to construct your lasagna or the flour in the sauce will thicken (if you're using store bought sauce then you don't really have to worry)

Serves 8

You Will Need:

For Sauce
  • 1oz Butter
  • 1oz Plain Flour
  • 600ml Milk
  • Salt & Ground Pepper
  • 2 Mangoes - Blitzed into a puree 
 For Lasagna
  • A Whole Salmon Fillet
  • Raw Spinach - 2 packets (500g)
  • 1 Onion - Roughly chopped & Part boiled
  • Lasagna Sheets - Depends on the size of your oven dish
  • Cheese - As much as you like, 100g were used in this recipe

Method

  1. Take your salmon fillet, & similarly with the Simple Salmon place the salmon on a piece of foil, to prevent drying of the meat add a tablespoon of olive oil then place that onto a baking rack which is then placed over a baking tray which has 2cm of water in. This goes into the oven for 15mins
  2. In the meantime prepare the mango puree. Remove the mango then place into a mixer (i used a handheld one)
  3. Blitz the mangoes then add 2 tablespoons of milk to allow the mixture to become a little runny. Place this to the side.
  4. Once your salmon is done, place into a bowl and lightly fork to allow the fish to become flaky, lightly season with salt & pepper then add the onions
  5. In a pan melt the butter, once melted add the flour, bit by bit almost creating a dough.
  6. Then remove the pan from the fire adding the milk, salt & pepper
  7. Use a whisk to smooth the sauce
  8. Once smooth add the mango mix then mix once more.
  9. In a oven dish construct your lasagna, i did mine in the following order: Salmon, sauce, cheese, pasta, salmon, cheese, spinach sauce, pasta, sauce, spinach, cheese
  10. Place in the oven for 45mins, leave to cool for 5mins then its ready to eat.
