Recipe: Salsa Cous Cous


I recently was asked if i had any CousCous recipes. Cous Cous is just a bland rice replacement as simple as it is to make plain Cous Cous to make it to challenge your taste buds is difficult, but i was able to come up with a refreshing recipe, one I've used at family BBQ's. It works cold or warm so its perfect for work lunch or a meal after gym.
Prep Time: 5mins | Cooking Time: 3mins
Serves 4


You Will Need:

  • 4 cups of plain Cous Cous - NB one cup per person
  • 4 tomatoes, seeds removed flesh diced
  • 2 gloves of garlic, crushed (finely chopped)
  • 1/2 cucumber, diced
  • 1/2 yellow bell pepper, diced
  • 1/2 green bell pepper, diced
  • Bunch of mint, finely chopped 
  • 1 juice of a lime
  • 1 lime zest
  • Salt, Pepper & Olive Oil to your taste
Optional 
  • Mango, Pineapple, Pear, Kidney beans, Chickpeas, Carrots,  Thyme.

Method

  1. Place the CousCous into a large bowl adding salt & pepper.
  2. Cover the CousCous with boiled water, (just enough so that it is covered) and cover with clingfilm or a plate. - this should take a few minutes to absorb the water.
  3. In the meantime you can dice your veg - NB if you are using kidney beans these need to be cooled before you add them to the couscous!
  4. Once the CousCous has absorbed all the water, add two table spoons of Olive Oil and fluff lightly with a fork.
  5. Add all your ingredients to the CousCous,minus the lime juice
  6. Fluff the CousCous again, then drizzle the lime juice over this. It keeps your ingredients fresh, as well as cleansing your pallet.
